
Left: a "terrine" of sorts with roasted eggplant, roasted red peppers, mozzarella cheese, parsley, basil, and home-made marinara. Stack and repeat.
Right: (left over) parsley salad with dressing of olive oil, lemon juice, maple syrup, salt, and pepper.
The "terrine" was delicious, but time consuming. It did feed me for a couple of days, so it was worth it.
